The varieties grown by our suppliers for McDonald's (Innovator, Fianna & Pentland Dell) are not affected by mineral nutritional bases, regardless of where they are grown. The nutrition content of our French fries is therefore consistent that is, they fall well within regulatory requirements for declaration. Our approach leads to consistency of product, which is our hallmark. The specification includes tight ranges for product parameters and manufacturing standards such as texture, solids content, oil absorption, concentration of the dextrose solution, and others. The specification identifies the potato varieties that can be used (and that includes their raw solids content.) At our restaurants, cooking and salting procedures are standardised. That being said, declared nutritional information such as kilojoules, fat, protein etc. will vary to some extent due to the different serving size offerings in-store: Small, Medium, Large and Extra Large.
